This is one of my absolute favorite recipes, loaded with whole foods and tons of flavor
Ingredients:
12-16 oz - Penne Pasta (I usually use red lentil for the added nutrition benefits, but any organic pasta will do)
1 head - Fresh Garlic
1-2 packages - Cherry Tomatoes
Fresh Chopped Basil
1 tsp - Sugar (optional)
1 tsp - Salt (or to taste)
1 tsp - Pepper (or to taste)
3-4 tbsp - Extra Virgin Olive Oil
1 tbsp - Rosemary (optional)
Sometimes I'll add some sliced bell pepper or other veggies for added nutrition
Look at those yummy FRESH WHOLE FOODS!!!!
Instructions:
1) Preheat oven to 400 degrees and
2) Add cherry tomatoes and full garlic cloves to oven safe glass pan and toss with olive oil, salt, pepper, rosemary and sugar
3) boil pot of water for pasta
4) Bake tomato mixture in oven for approximately 30 mins (or until tomatoes look fully cooked, but not yet burnt)
5) Cook pasta according to package instructions
6) Remove tomatoes from oven and crush to desired thickness using a potato masher. (This will beautifully mix all of the spices, garlic, and tomato together, making an amazing tomato sauce)
7) Toss pasta, sauce and basil in a bowl
8) Serve and enjoy!
